We are shopping around for fermentation vessels for our nano in planning and were considering using variable capacity wine tanks in place of inductor tanks. We're trying to determine what the pros & cons are of using these variable capacity wine tanks as opposed to a traditional cone shaped tank (conical) for fermentation although they do have a slightly cone/sloped bottom.
Since they are stainless and glycol jacketed they seem to have some distinct advantages over the plastic conical inductor tanks.
Since we'll only be producing 3bbls at a time and likely not harvesting our yeast from these from batch to batch are there any potential drawbacks of using these relatively inexpensive vessels for fermentation?
