  • Spruce Tips?

    Howdy hi all,
    I am getting ready to harvest some spruce tips from locally-grown (northwest Montana) blue and green spruce trees for an upcoming seasonal specialty. Last year I received request for any excess tips that I didn't use.
    Is there any demand out there in the craft community for freshly harvested spruce tips this year?

    If you've never used spruce tips in your beer, they add a wonderful fresh, citrusy flavor. They are also very high in vitamin C.
    Please let me know soon as the harvest season is short!

        funny this thread came up I just picked a few pounds of tips this morning for a beer ill be brewing in the fall northern green spruce
        never brewed with them but well see what happens
        when does everyone add the to the boil/how much
        any advice would be great

          Hi Matt,
          I have had fantastic results adding two pounds per barrel in the last twenty minutes of the boil. I used a cloth hop bag to keep the spruce tips from getting into every nook and cranny.

                  I brewed a spruce rye IPA last year. It was awesome. I used to live on a 200 acre Christmas tree farm so there ya go. I find that blue spruce has a kind of cat pee aroma. I've never used it in a beer however.
                  The beer I made was with spruce and concolor fir tips. I went around the tree farm tasting every variety I could find and the concolor fir was definitely my favorite. It had a very citrus/tangerine flavor. The beer came out great, just bittering hops and the tips for flavor and the concolor fir tips really shined. One of my favorite beers. If you can get your hands on them I would recommend it.
                  Since it was so convenient for me to acquire them, I picked them on brew day and used them right after picking. I remember reading that they don't hold up too well over even a short period of time. Cheers
