I am getting ready to harvest some spruce tips from locally-grown (northwest Montana) blue and green spruce trees for an upcoming seasonal specialty. Last year I received request for any excess tips that I didn't use.
Is there any demand out there in the craft community for freshly harvested spruce tips this year?
If you've never used spruce tips in your beer, they add a wonderful fresh, citrusy flavor. They are also very high in vitamin C.
Please let me know soon as the harvest season is short!
