    Hi Everyone,

    I would like to get some input from other brewers on how they go about measuring the pH of their final beer. From my understanding, you should get rid of all the CO2 in solution as this will give you a false reading? How do you go about getting rid of the CO2 in solution?

    I degas samples by literally sloshing them back and forth somewhat aggressively between two of my measuring 1L pitchers 22 times... Why 22? Its what I was taught and it actually seems to get the samples pretty degassed. Seems to work well for us, and it's consistent.

      You can either de-gas with the beaker-to-beaker method, as above, or filter through a coarse paper. Either will remove most of the CO2 and, as carbonic acid is a weak acid, any residual will result in negligible difference.

        Take a sample in a plastic measuring pitcher. Use a whisk on it several times. When it warms enough take you pH and gravity readings. A whisk is pretty effective... The foam it creates will collapse with time.
