  • First hand Experience Using Calypso hops?

    Interested in anyone can give me any first-hand sensory analysis of using only Calypso hops in a beer that is dry-hopped aggressively? I'm looking for experience with Blondes, Milds, Pale-type beers. Does it express well? I sit too flat to be nice featured by itself?

    I did a Calypso IPA using only that hop for flavor, aroma, & dry hop additions. Super fruity, smooth, nice character. Not a pungent or aggressive hop, so you can/should be heavy handed with it. I brewed it as a one-off, but our customers went nuts for it and I brewed two more batches right away. Then I ran out of Calypso and my customers got grumpy.

      I did an all Calypso brew also. I believe I used too much on the dry hop 11# in 15 bbl. I liked it a citrus note but it changed odors quite often as it aged. It sold like gangbusters but quite strong so I dont think I got a true aroma of the hop

        Pleasant brighter fruit notes. Light citrus and what not. I found that it creates a killer synergy with Meridian, giving a spiced cherry sort of thing in the kettle.

        DH we have only done about 35% or so of total blend, but it has performed well.
