  • Hazelnut Extract

    I am formulating a brown ale for a customer and they have suggested interest in a mild hazelnut flavor. Wondering if anyone has suggestions for a brand and possible use concentrations? I am looking for a noticeable, but not assertive, hazelnut character. Any help would be appreciated.

    Hazelnut Extract

    Lorann Oils, located in Michigan, makes excellent beer compatible flavorings, including one called "Creamy Hazelnut". You can check them out at www.lorannoils.com or call customer service at 1-800-862-8620. You won't be able to see the larger size packages (1qt, 1gal) until you establish a business account. These flavorings are added to otherwise finished beer. You will have to experiment with proportions - each different beer/flavor combination will be unique. A gallon of their cherry flavoring in 210 gallons of hefeweizen makes a nice cherry wheat. Same proportions work well to make chocolate or raspberry stout. You can experiment with about 1oz in a 5 gallon corny keg of your base beer and add more 1oz at a time until you get the right flavor intensity, then just proportion it up for your batch size.
