    THE BIG PICTURE

    The Special Project Assistant is responsible for the day to day maintenance of brewery special projects. S/He plays an active role in cleaning tanks, preparing tanks, helping with barrels, brewhouse duties and special project packaging. The Special Project Assistant will play an active role in barrel projects, special brewing projects and unique packaging days. The Special Project Assistant will report to work closely with the Special Projects Brewer, and will follow procedures established for and approved by Modern Times Beer. Candidates must share Modern Times’ commitments to quality, safety, business ethics, and continuous innovation.


    THE EVERYDAY VIEW
    - Maintenance and sanitary sampling of Brettanomyces and mixed-culture fermentation
    - Aseptic transfer of wort, beer, yeast and bacteria pitches
    - Maintenance of separate parts from normal cellar operations
    - Working with the lab to obtain and record cell counts, micro test results
    - Propagating and developing house cultures
    - Maintaining archive of special beer
    - Preparation and Operation of gravity filler and counter pressure bottle filler
    - Cataloging and maintaining special project package types and packaging material
    - Daily facility maintenance and cleaning
    - Equipment optimization and preventative maintenance
    - Following established procedures to clean tanks
    - Development and optimization of unique SOPs
    - Correctly engaging/disengaging valve and frequency drives
    - Safely handling cleaning chemicals, and using the prescribed amount for each task
    - Applying the correct pressure and volume of compressed CO2 gas to tanks for carbonation and displacement of beer as it is being packaged
    - Using the associated equipment to fill or empty wooden casks, kegs, barrels, etc., and safely moving vessels with a forklift
    - General cleaning
    - Other tasks may be assigned as needed


    DESIRED SKILLS AND EXPERIENCE
    - Must be 21 years of age or older at the time of application
    - Able to pass a post-offer, pre-employment background check
    - Minimum 2 years of commercial production brewery experience
    - Knowledge of Brettanomyces and mixed fermentation
    - Knowledge and understanding of basic laboratory functions and microbiological concepts
    - Strong work ethic and self-starting attitude
    - Good interpersonal skills and team spirit
    - Proficient operation of a forklift and pallet jack
    - Common sense
    - The desire to work in a fast-paced, growing company
    - Genuine enthusiasm for craft beer
    - Willingness to regularly work during evenings and weekends


    PHYSICAL AND MENTAL REQUIREMENTS
    - Able to stand for prolonged periods
    - Able to stoop, crawl, twist, turn, lift, kneel, climb ladders and stairs
    - Able to manipulate valves and clamps
    - Able to read and follow written English instructions
    - Able to regularly lift/carry 44 pound boxes
    - Able to regularly lift/carry 55 pound bags above waist level
    - Able to lift/move 165 pounds
    - Able to work in a factory/production environment which may be loud, slick, humid, and hot
    - Able to work in indoor and outdoor environment with moderate noise, sometimes slippery floors
    - Able to comply with safe chemical handling procedures, including personal protection equipment such as gloves and goggles

    ABOUT MODERN TIMES
    Modern Times is a 30bbl production brewery in the Point Loma neighborhood of San Diego. Modern Times is named after a beautifully crazy utopian community founded in 1850, and (almost) all of our beers are named after real utopian experiments or mythological utopias. Today, we're distributed throughout Southern California, San Francisco, the Central Coast, Maui, and select international markets. We operate a tasting room at the brewery, as well as in San Diego’s North Park community. We plan to open a pilot brewery, restaurant, and specialty coffee shop in Los Angeles in 2016. We brewed our first batch on May 18th, 2013; our beer went on tap for the first time on June 24th 2013; we held the soft opening for the Lomaland Fermentorium tasting room on August 9th, 2013; and our Grand Opening was September 7th, 2013.
