  • Yeast harvest anomaly -- hole in yeast cake?

    I harvested 002 today and accidentally crashed two days ago to 34, instead of either 45, of 57 (if dry hopping) for harvest. When I harvested, I had about 7-8 lbs head pressure from spunding. I cracked it as slow as I usually do, but instead of the chunky monkey yeast flow that is wlp002, I got smooth and creamy like a 001. I also had significantly less by weight than usual. This was a harvest from a fresh pitch, and I usually get 45-55 lbs from those and only got 30 lbs of pretty runny yeast. My thought is that because it was at 34 for two days, it compacted harder than usual, and when I cracked it, I pulled a hole thru the yeast cake in the cone, pulling in yeast from the side of the hole as I filled my vessels.

    Does this make any sense? Has anyone seen 002 EVER run out creamy? I do not have a microscope so I'm going by sight. The vessels I harvest in I can see through so I'll have a much better picture in the morning when I can see the separation.
