    Folks,
    I'm looking to start producing non-alcoholic ginger beer at a brewery. Regulation falls under my state's food processing regulator (in Wisconsin, Department of Agriculture, Trade, and Consumer Protection). I'm starting to build my HACCP plan, but I still have several questions about additional requirements for soda beverages vs. beer. Is there anyone here who started brewing root beer at brewery? What kinds of additional regulations were involved? Did you have to make any changes to your brewery? Did you have to wear hair and beard nets? Was additional record keeping involved? Any feedback is greatly appreciated.
