    Bottle Conditioning Resources

    Can anyone recommend books, websites, or papers on bottle conditioning with a bit more of a professional slant? There is quite a bit of home brewer information out there but I am struggling to find anything on a commercial scale.

    I have a good bottle conditioning spreadsheet created by John Mallet. Email me at kevin@alibi.beer and I will pass it along. Ultimately you should do small scale trials to dial in your priming rates and techniques before scaling up.

    Dr Matt Bachman has a paper out there on terminal acid shock in bottle conditioning. And good tips on conditioning/adjusting your bottling yeast for higher alcohol and/or lower pH beers. I heard a good interview with him on the BN Sour Hour but I'm sure you can track down the research paper with some internet searching.
