    Hey,

    We are sitting down and finally getting to work with our architect. Any ideas on space requirements for production, dry storage, cold storage etc. that is required for a 7 BBL brewery with a taproom.

    We have more space than we really need but trying to get ballparks of how much people are using for each purpose.

    Production, cold room and dry storage will very based on your estimated yearly/monthly volume and distribution decisions.

    Production-
    Depending on the brewhouse design ( vessel / 3vessel, Hot Liquor Tank) and the manufacture, estimate about a 5-6 foot diameter for each tank. A 7BBL kettle will stand about 7-8 feet tall depending on connected platform. Leave a foot or two behind the brewhouse for piping, controls. Depending on your ceiling height you can elect to use a grist case, feed straight into mash hydrator from mill or use pre-cracked grain bags. You will also need to decide on direct fire, steam (boiler room), or electric (additional control boxes).

    Are you selling everything inhouse ? will you have keg accounts ? will you be canning or bottling?

    These questions will determine the space you will need for the appropriate number of cellar tanks both now and future expansion (if expansion is in your business plan). 7BBL tanks stand about 6 feet tall with a 4-6 foot diameter. SMT just built some stacked 7bbl fermentation and bright tanks that save space on the floor and sit about 12 feet tall. a 15BBL tank will be about 6 -7 feet diameter and sit about 8 feet tall. Most manufactures can help you customize sizing.

    If you are distributing you will need room for both empty kegs on the floor and full kegs in the cold room. Grain storage will depend on production volume and order volume (palates of 50lb bags etc).

    So you can see there are lot's of variables that contribute to space requirements. Let me know if you would like to discuss further. Best of luck with your project.
