I brewed an IPA with 63 IBU's, 6.5% ABV that needed to get filtered 2x to remove all the yeast and dru hop pellet materials. Anyways, it's resinuous and nice up front, a black pepper, almost unpleasant bitterness at the finish that seems like there is hop material being sucked on. Not sure what I did wrong, though at the moment the beer is being appreciated by customers. For how log...no clue. I have been racking my brain as to what went wrong and can't figure it out. Thoughts?
