    We are a creative, rapidly growing brewpub with a funky vibe in the heart of Asheville, North Carolina, and we’re seeking a brewer to join our team of dreamers and doers. The brewer is responsible for brewing beer on our 15BBL brewhouse and 1BBL pilot, working alongside our Head Brewer to meet CEO/Board of Directors expectations and business needs. Since we are growing so quickly, the main responsibilities include meeting production goals, upholding quality standards, training and educating taproom staff on beer styles and tasting notes, and maintaining a clean and positive work environment. The brewer is also responsible for upholding brand standards and acting in the best interest of the brewery. We have cultivated a pretty awesome culture here, and we also offer benefits.     Additional Duties & Responsibilities:
    Provide knowledge of the brewing process, recipe formulation, and ingredients with an ability to troubleshoot quality and production issues.
    Conduct monthly physical inventory counts of raw materials, brewing supplies, and all inventoried items relating to brewhouse and cellar. Turn counts in to our number crunchers. Communicate inventory levels below par to Head Brewer. Investigate variances of physical versus book inventory on a monthly basis and communicate findings to our leadership team.
    Provide knowledge and understanding of brewery equipment including maintenance and repair.
    Create a safe, clean, organized, and healthy work environment in the brewery.
    Prepare all required paperwork, including forms, reports and schedules in an organized and timely manner.
    Ensure that all equipment is kept clean and kept in excellent working condition through personal inspection and by following the brewery’s preventative maintenance programs.
    Work alongside Head Brewer to ensure that all ingredients and products are ordered according to predetermined product specifications and cost, as well as received in correct unit count and condition and deliveries are performed in accordance with brewery’s receiving policies and procedures.
    Control beer cost by brewing, storing, and serving beer to brewery standards.
    Maintain appropriate cleaning schedules for floors, brewhouse, brewery, tanks, mill room, walk-in cooler, other brewing equipment, indoor and outdoor storage and brewing related areas.
    Check and maintain proper beer holding and serving temperatures.
    Accept inventory as it arrives. Clean brewery equipment. Assist with canning day runs. Other duties as requested by Head Brewer.
    Input production entries into Ekos Brewmaster.
    Accept inventory items into Ekos Brewmaster.
    Competently operate brewhouse equipment to process brews according to brewery’s SOPs, including, but not limited to the items below:
    Brewhouse operations: Milling, Mashing, Lautering, Boiling, Whirlpooling, Knockout, Brewhouse CIP (incl Heat Exchanger and Hot Liquor Heat Exchanger)
    Cellar-Related operations: Fermenter CIP/Scrub/Sanitation, Cell Counting, Checking Gravities/Monitoring fermentation(Incl. Glycol Controls), Capping/ Chilling/ Dryhopping schedule and procedures, Yeast Disposal, BBT Cleaning and Sanitizing, Recording fermentations, Reading BBT levels and recording, Checking DO and Co2 in beer
    Packaging operations: Carbonation of beer, Transferring beer from wood barrels, Checking CO2 in beer
    Quality Assurance Operations: Cell Counts, Pitch Rates, Gravity Measurements, DO Measurements, Process Sampling, Yeast Viability Measurement, Taste Panel
    Other: Effluent processing as it relates to the above operations, Cleaning and organizing standards, Daily Record of Activities accurately and legibly recorded.
    Qualifications:
    A minimum of 2 years of experience as a commercial brewer (we love our homebrewers, but commercial brewing experience is a must for us).
    Strong understanding of beer science, brewery technology and brewery operations.
    Strong QA/QC knowledge will make our hearts skip a beat.
    Must be able to communicate clearly with managers.
    Be able to reach, bend, stoop and frequently lift 50-pound malt sacks.
    High school diploma or general education degree (GED). More advanced brewing education is a plus, but not a requirement.
