Hi all, we're upscaling to 15bbl jacketed wine fermenters for our fermentation (kombucha). We want to use the jackets to keep the product warm 70-80 degrees F for several weeks, then use them to chill the product down to the 30's. I believe we have the chilling side down, but how about the warming side? Any ideas would be appreciated. I've been told generally just a T valve right off the tank and switch it when going from warm to cold, but can I still use glycol, and what type of heater would I look for? Any other considerations that I'm not aware of? Many thanks!
