    Position:
    Mountain Layers Brewing Company is looking for an experienced, creative Head Brewer who is interested in continuing to develop world class beer for a community focused microbrewery and taproom located in downtown Bryson City in the beautiful Smoky Mountains of Western North Carolina.

    Who We Are:
    Mountain Layers Brewing Company is an established microbrewery and taproom, located on historic Everett Street in downtown Bryson City, in Swain County, which is the gateway to the Great Smoky Mountain National Park, in North Carolina. We are excited to be a part of the growing craft brewing industry in Western North Carolina and we focus on bringing people and the community together to a comfortable and friendly brewery, where you can relax and enjoy this beautiful place from either inside or outside on our spacious rooftop deck, offering southern hospitality, but especially great handcrafted beer along with other beverages for the whole family.

    Who We Are Looking For:
    This is a wonderful opportunity for a very special person. The ideal candidate will have 3+ years fulltime commercial brewing experience with a proven ability to create world class beers and the interest to explore and be creative. In addition, the ideal candidate will have degree in Brewing Technology and/or Fermentation Science, education may be substituted for experience and vice versa depending on range and depth. We want a self-starter who can get things done. This person should not only be able to brew great beer, but have the desire to develop the microbrewery and the brand as a whole. We need someone that is not only a teacher, but a learner that takes pride in their work. Most importantly, we want someone that is able to improve upon our established high-quality brewing program: from sourcing to serving and everything in between. This person needs to be capable, competent, caring and able to evolve with us to develop our story and love for the community, people and everything beer.

    Key Responsibilities:
    • Maintain and Operate our 7 BBL Brewhouse.
    • Design and brew a wide variety of styles, ranging from “classics” (IPA, Stout, ESB, Pale, Brown) to specialty and seasonal beers.
    • Brew up to 1000 bbls/year for pints-on-premise consumption, wholesale sales and future package sales.
    • Source ingredients, develop recipes, manage raw materials, inventory control and ordering / hop contract.
    • Obsessive about sanitation, sanitary practices and quality control.
    • Yeast management: including ordering, pitching, harvesting and propagation. Monitor yeast cell counts during fermentation and conditioning: this includes sanitary yeast handling and ability to utilize lab equipment.
    • Effective management of Cold side of Operations.
    • Develop / maintain SOP’s to monitor and enforce high standards of quality and excellence.
    • Teach, train and mentor others in the art and craft of brewing.
    • Oversee all cleaning, sanitation and maintenance. Ensure that all equipment is kept clean and kept in excellent working condition through personal inspection and by following preventative maintenance standards.
    • You must excel at troubleshooting and problem solving.
    • Work closely with management to meet budgets, develop production schedules, monitor costs, report on items necessary for management to track profitability, ensure State / Federal compliance and file all necessary documentation for reporting.
    • Must interface well with public. You should like people, enjoy answering questions and look forward to participating in occasional events.

    As a Member of the Management Team actively participates in consultation and advisor role on any aspect of brewery and occasionally functions as Manager on Duty (MOD). Job duties may include but aren't limited to the following:
    • Ensures that all guests feel welcome and are given responsive, friendly and courteous service at all times.
    • Promotes company's mission and values.
    • Fills in where needed to ensure guest service standards and efficient operations.
    • Prepares all required paperwork, including forms, reports and schedules in an organized and timely manner.
    • Attracts guests by developing and implementing marketing, advertising, public and community relations programs; evaluating program results; identifying and tracking changing demands.
    • Controls purchases and inventory by meeting with management team; negotiating prices and contracts; developing preferred supplier lists; reviewing and evaluating usage reports; analyzing variances; taking corrective actions.
    • Builds company image by collaborating with customers, community organizations, and employees; enforcing ethical business practices.
    • Maintains quality service by establishing and enforcing organization standards.
    • Maintains professional and technical knowledge by attending educational workshops; reviewing professional publications; establishing personal networks; benchmarking state-of-the-art practices; participating in professional societies.
    • Be knowledgeable of policies regarding personnel and administer prompt, fair and consistent corrective action for any and all violations of company policies, rules and procedures.
    • Fully understand and comply with all federal, state, county and municipal regulations that pertain to health, safety and labor requirements of the brewery, employees and guests.
    • Provide advice and suggestions to management team as needed.
    • Always strive to improve in all the above duties and responsibilities.

    Qualifications:
    • Responsible self-starter who works well with little supervision.
    • Professional degree in Brewing Technology and/or Fermentation Science, experience may be substituted for degree depending on range and depth.
    • 3+ years of professional experience in a brewpub or production environment, education may be substituted for experience depending on range and depth.
    • Intimate knowledge of classic beer styles with a demonstrated ability to brew to styles as well as to push boundaries and apply creative techniques.
    • You must be able to brew a variety of IPAs that are all exceptional. Experience with barrel ageing and high gravity seasonals a huge plus.
    • Must be able to stand/walk during entire shift and have the ability to frequently lift up to 65 pounds and team move up to 165 pounds and work in a physically demanding environment (reach, bend, stoop, crawl, push, pull, wrangle hoses and repeat many times during the shift).
    • Knowledge and practice of safe handling of chemicals, hot liquids, high voltage, moving machinery, compressed gases and pressurized vessels. Can work in loud, slippery, hot, humid and cold environments for extended periods of time.
    • Have a flexible schedule to accommodate meetings, festivals, evenings and weekends as needed.
    • Must have a clean driving record.

    Compensation & Benefits:
    • We expect a lot from our Head Brewer. However, we believe this is an incredible opportunity for the right person: Wage commensurate with experience; Bonus based on performance; Paid personal time off; professional education and conference allowance.
