  • Fining Saflager S-23

    I like the flavour profile of S-23 for a lot of things, but one consistent problem I have is getting it to clear in the tank. My usual gelatin protocol has little effect, even at high doses. Does anyone have a fining procedure that works for this yeast? Filtration isn't an option for us at the moment.

    I strongly suspect this yeast, being recommended for German lagers, does not, in common with many true lager yeasts, work at all well with finings, so long cold conditioning times will be required - or a centrifuge if your system is large enough to support such a beast. The colder the better for most rapid sedimentation.

      I have used this strain before and have had great results with nalco 1072 aka biofine clear. Personally, I don't use gelatin.
