  • Controls for direct fired brew house

Folks, based on the location I'll be in, I've been focused on electric powered breweries. That limits me to 7bbl and requires 3phase power. I think I can probably use a direct fired system (will have to be propane) but I'm a little stumped on a control panel. It is easy to find panels for electric breweries, but how are most direct fired systems controlled? In homebrewing, I just turn the knob on the regulator...

I've used Johnson Control unit A419 in the past. Not too pricey and dependable.

Generally speaking direct-fire kettles run on/off - your plumber should be able to detune it to some extent if running it wide open gives an unacceptable boiloff rate. If you want control beyond an on/off switch (for kettle souring, e.g.) I'd suggest a PID rather than a single-stage controller, to damp out the temperature swings.

Thanks. I worked on a Premier 7bbl direct fired system that had a nice big control panel and I had that in my mind. But now that I think about it, that system was hard piped with pumps and the heat exchanger. A lot of the PID controls in that panel were for the HLT, pumps, etc. But, yes, I do need to be able to turn down the burner.

We have a 7bbl direct fire brewhouse. I recommend Marc Ward at wardburner.com. He was really help and reasonable.

Thanks for the replies. Midco is where I was planning to get my burner but I'll also talk to Ward as well. The main thing I'm trying to figure out is how to turn down the burner after the kettle comes to a boil.
