Lead Cellar Operator for Trillium Brewing Company

Trillium Brewing Company is looking for an experienced Lead Cellar Operator to join the Production Leadership Team and manager our barrel aging and wild beer program. This position calls for a motivated, autonomous leader with great attention to detail to thoroughly oversee all cellar operations, abiding to Trillium’s high-quality standards. Essential Job Duties and Responsibilities:
Production:
● Plan, schedule, and coordinate all wort production with Lead Brewer
● Manage natural conditioning process with all packaged beer
● Oversee packaging of wild beers
● Build and maintain fruiting schedule for all wild beers
● Operation of Centrifuge in the cellar
● Yeast management
● Sensory evaluation
● Coordinate purchasing of all raw materials with the Director of Production
● Coordinate purchasing of all barrels with Director of Production
● Evaluate raw materials and fruit for use in wild cellar
● CIP fermentation vessels, BBTs, transfer lines, etc.
● QC/QA protocols in the cellar. Strict adherence to QA/QC documentation
● Safe forklift operation
● Follow strict safety standards
Leadership:
● Lead small team of wild cellar people
● Manage safety and quality in your area
● Manage and maintain all documentation/record keeping
● Build and maintain SOP’s
● Schedule labor in your area
● Address any performance issues or skill gaps in team
● Conduct performance reviews for your team
● Conduct interviews for open positions and make hiring recommendations
Additional duties may be assigned as necessary.
Desired Qualifications & Abilities
Experience
● 2 or more years of experience managing a wild beer cellar operation, producing mixed fermentation and barrel aged beers at a medium sized brewery
● Experience using Orchestrated Beer for all production documentation
● Formal brewing education preferred but not required
● Experience handling and processing fruit for fermentation
● Forklift experience preferred (Trillium Brewing will provide training)
Knowledge, Skills, and Abilities
● In depth knowledge and understanding of sour beer production
● Sufficient computer literacy, writing, and math skills necessary to accurately document data collection worksheets
● Ability to lift large, heavy items
● Ability to stand for prolonged amount of time
● Ability to safely handle hazardous chemicals in accordance with strict safety protocols
● Have a passion for quality beer and workmanship
