    Higher than expected attenuation

    Hello All,
    we have recently been getting higher than expected attenuation rates in the brewery. We have been using fermentis products and were getting great results until recently. It seems like all the beers are finishing around 5% higher than previous repeated results. I wounder if it a possible infection setting in or something obvious i'm missing. With that said any thoughts on where to start looking.

    What strain are you using? Also, are you doing forced ferments to cross-reference your final gravities?

    this could be multiple issues. do you know the malt analysis from the malter? you could be extracting more fermentable sugar vs. unfermentable. how strong is your yeast strain? can it produce emzymes to break down more complex sugars?
