Brewing Operations – Charleston, SC:
Perform all aspects of the brewing process in Charleston according to CVBC standards (grain handling, wort production, fermentation, packaging, yeast management, cleaning/sanitization, safety, and routine maintenance).
Monitor, record, and evaluate brewhouse and cellar efficiency and performance. Identify and suggest improvements for all brewhouse processes including daily monitoring of brewhouse extract efficiencies and remediation of actual or potential quality
Ensure all brewing documentation including TTB spreadsheets, brew sheets, packaging logs are accurately and properly prepared, suitable for regulatory requirements, and submitted in a timely manner including entering data into ERP software.
Execute brewing, cellaring and packaging schedule according to plan as needed
Maintain flexible schedule
Assist QA manager and Head Brewer in completing brewhouse and cellar labs testing including but not limited to: yeast count/viability, wort stability, brewing water chlorine and Ph, wort O2 levels.
Complete OSHA trainings (Hazcom, Fork Lift, PPE, Confined Space Entry, Lock Out/Tag Out, Emergency Evac et al)
Reporting:
Ensure all brewhouse activities are properly recorded in brewhouse software (EKOS).
Monitor and update brewhouse software daily to ensure data being entered on the brewhouse side is updated in a timely manner and correct. Work with brewhouse teams to remediate and re-train if needed.
Outreach / Brand Ambassador
Professionally and enthusiastically lead brewery tours
Educate other brewery employees in beer and the brewing process
Coordinate with brewing and marketing teams to suggest new products, new ingredients, new processes.
Facilities Maintenance:
Diagnose equipment failures or malfunction, and repair when possible.
Ensure all brewhouse facilities are clean and clutter free
Work with facilities team to plan for new equipment – including updating SOPs, staffing to install and learn to operate, and ensuring safety protocols are all met.
Desired Minimum Qualifications
Education: High School Diploma or equivalent, with a certificate or other advanced education in
the brewing process. A four year degree, or equivalent, in Fermentation Sciences is preferred.
Experience: 5-7 years in a similar or related field.
2+ years brewing experience.
Have a basic understanding of Excel, Word, Access and other programs for brewery functions.
