    Hey everyone!
    Just got an order in of 7 used red wine (Cab Sauv) barrels. I was wondering if I should inoculate the barrels with a mixed culture or would there be enough cultures already present in the pores to do a bit of souring? I just finished filling them with 170f water to clean out the old wine and to get the cultures under control! Currently, they're sitting with cold water in them for about another day before I start filling them with some IPA we have here!

    I would definitely inoculate them with the bugs of your choice (commercial bacteria/Brett and/or bottle dregs). There may be wild bugs in the barrels that you have but they may not be the type you're looking for.
