    LOCATION: Middleburg Heights, Ohio

    PURPOSE: To be responsible for overseeing all lab functions and personnel in order to ensure a high quality, sanitary, and safe product. Problem solving and attention to detail are a must for this important role that allows our consumers to safely and consistently enjoy high quality Fat Head’s beer.

    ESSENTIAL FUNCTIONS:
    • Coordinate daily lab operations
    • Identify staffing needs, interview and hire qualified staff, and set work schedules
    • Provide ongoing positive and disciplinary performance management
    • Train new and current employees on proper company policies and lab practices
    • Analyze and troubleshoot issues to arrive at a solution that maintains or improves product quality
    • Collect samples and run routine testing to determine gravities, pHs, Alcohols, IBUs, color, VDKs, etc
    • Perform daily cell counts of yeast and fermenting wort
    • Complete package testing for CO2, TPO, DO, HSO, AE, alcohol, density, pH, bottle fill heights, crimp checks, secure seal, seam checks on cans/kegs
    • Perform microbiology testing including membrane filtration, media preparation, spread plating and identification
    • Harvest, move and pitch yeast while maintaining overall yeast health
    • Manage daily sensory panel
    • Perform regular equipment cleaning, maintenance and calibration
    • Write, update, and improve Standard Operating Procedures (SOPs) for the lab

    Safety
    • Maintain a clean, sanitary and safe working environment
    • Report any and all health or safety hazards noticed
    • Follow instructions and directions regarding the use of chemicals and supplies
    • Use required Personal Protective Equipment (PPE)
    • Adhere to all Safety policies and procedures
    • Other duties as assigned

    REQUIREMENTS:
    • Bachelor’s degree in Microbiology, Biochemistry, Chemistry, Food Sciences or related field
    • Previous lab experience, in a production brewery preferred
    • Superior math, statistical and analytical skills
    • Obsessive attention to detail and record keeping
    • Ability to operate computer, microscope, pH meter, spectrophotometer, GC, centrifuge, autoclave, etc.
    • Flexibility and adaptability to varying schedule preferred
    • Ability to work well in a team environment and independently
    • Comprehensive communication skills
    • Innovative, ambitious, safety conscious, driven yet caring and dedicated

    • Occasionally lift, push, pull or move objects weighing more than 60 lbs. and rarely more than 165 lbs.
    • Required vision abilities include close vision, distance vision, color vision, peripheral vision, depth perception and ability to adjust focus
    • Work is primarily performed in a production brewing environment and lab environment. May be exposed to temperature changes, wet or humid conditions, noise, vibrations and other brew production related hazards
    • Will require weekend work
