Lab Manager


Responsibilities:
Ensure all product meets JuneShine quality standards including:
• Required legal specifications
• Appearance, aroma, and flavor standards
• Packaging standards and specifications
• Nutritional label standards
• Aging and shelf stability standards
o Establish baseline targets across all steps of manufacturing processes
o Ensure lab and quality areas meet and exceed safety standards
o Identify, Procure and Maintain necessary lab equipment in order to meet quality standards
o Work closely with all necessary departments and locations to ensure methods and best
practices are being observed in order to meet quality standards
o Identify potential contamination risks and provide solutions and preventative measures
o Write and maintain lab SOPs including lab safety procedures
o Organize and conduct sensory trials on finished and unfinished product and raw materials
o Work closely with brew team on product improvement

Qualifications:
• Minimum of 2 years production brewery or packaged food/beverage production QA/QC experience
• B.S in areas of Biology, Chemistry, or Fermentation science desired and Brewing experience and education are a plus.
• Proficiency with standard brewery lab equipment and tasks, including Alcolizer, DO meter, CO2 measurement, ATP swabbing, cell counts, viability and vitality, and water analysis.
• Knowledge of microbiological techniques and wet chemistry
• Knowledge of fermentation processes
• Exceptional pallet and ability to identify off flavors and aromas including sulfur, diacetyl, acetaldehyde, astringency, etc.
• Ability to manage sensory trials including triangle tests, descriptive analysis, and off flavor training
• Excellent problem-solving skills
• Excellent communication skills
• Proficiency with spread sheets and necessary quality related software

While most alcohols contain GMOs, high fructose corn syrup, and food coloring, we sought to make the healthiest, naturally sourced product. Our kombucha is a jun kombucha, made from green tea and honey, whereas normal kombucha is produced with black tea and sugar. We realized that we were not alone in seeking a natural alcohol. Beer preference is at an all-time low, and wine and spirits continue to see low digit year over year growth. The alcohol class exhibiting double digit growth is the near
beer class (spiked seltzer, hard cider, etc), hence the recent acquisitions of companies such as Spiked Seltzer, Virtue Cider, and venture investments such as Cavu Venture’s investment in Mighty Swell Sparking Cocktails.

Our Goals: Rapid growth, contingent upon two strict conditions: 1. We do not sacrifice quality of our product. 2. We do not sacrifice quality of our culture.

Our Culture: We derive much of our management policy from a book we give you upon hiring, ‘Let My People Go Surfing’, by Yvon Chouinard (founder, owner, Patagonia). Our policy is to allow workers flexible hours, provided the work gets done with no negative impact on others.
