POSITION OVERVIEW
Mass. Bay Brewing Company’s (MBBC) Senior Cook ensures the kitchen operates according to the real-time demands of Riverbend Taps as well as the service and quality standards of the company. The Senior Cook plays a critical role in maintaining a safe, clean and highly productive work environment while embracing MBBC's culture. The Senior Cook must be able to execute their duties without on-site supervision from the Culinary Manager (CM) and/or the Assistant Culinary Manager (ACM), including shift management of assigned area, self-reliance, problem solving skills, ability to function productively in a stressful environment, etc.

The Senior Cook must be able to execute their duties without on-site supervision from the Culinary Manager (CM) and/or the Assistant Culinary Manager (ACM), including shift management of assigned area, self-reliance, problem solving skills, ability to function productively in a stressful environment, etc.
RESPONSIBILITIES
Responsibilities include but are not limited to the following:
- Measuring and assembling ingredients for menu items within designated station
- Assisting in training of all kitchen staff based on departmental needs
- Collaborating with the CM and ACM to familiarize newly hired staff with kitchen equipment operations
- Acting as a lead to the cooking staff and providing guidance & support when needed
- Providing performance feedback on cooking staff to management to be tracked and used for professional development
- Collaborating with both the CM and ACM to prepare meals during dining hours
- Maintaining accurate food inventories for designated areas
- Properly storing food items at appropriate temperatures
- Rotating stock items as per established procedures
- Restocking designated prep. area for subsequent shifts
- Ensuring daily food prep. list has been completed and communicating any variances to CM or ACM
- Ensuring the food prep. area and kitchen are cleaned and sanitized at the end of the shift
- Maintaining professional relationships with all co-workers
- Following checklists and standard operating procedures
- Maintaining a safe, clean, organized and stocked work area
- Having full knowledge of menus, recipes and other pertinent information
- Answering staff questions regarding menu ingredients and allergy concerns for new menu items
- Responsible for constant sanitation, organization and proper food handling
- Preparing work area for opening, mid-shift or closing shift in accordance with company standards
- Attending regularly scheduled department meetings
- Performing other related duties as assigned by the CM or Manager-on-Duty
- Completing opening and closing checklists when necessary
- Signing off on opening and closing checklists when necessary
- Communicating with management to ensure guest satisfaction
- Being initial contact for all kitchen-related shift coverage
REQUIREMENTS/EXPERIENCE/SKILLS
- Ability to work in a fast-paced kitchen environment
- Ability to work in a team environment
- Ability to follow strict food safety requirements
- Ability to complete ServeSafe course and pass exam
- Maintaining a professional appearance at all times
- Reporting to work as scheduled, in uniform, and ready to work
- Ability to work nights, weekends and holidays
