Supreme Core Cider (Washington, DC) is seeking a Head Cidermaker. Position responsibilities include:
• Establishing and maintaining relationships with orchards and fruit / juice suppliers
• Executing the cidermaking process, from juice selection and blending through to fermentation, finishing, carbonation and packaging
• Maintaining cellaring functions, including oversight part-time cellaring and other staff
• Interfacing with mobile canning team, including equipment testing and prep, and playing an active role during the canning process on canning days
• Maintaining accurate production records, including quantities in and out, loss data, etc., as well as all records necessary for accurate tax reporting at the federal and state levels
• Maintaining accurate production and “in-market” product calendars
• Interfacing with sales staff, distribution partners and company leadership on issues pertaining to product vision, development, timing and marketing
The ideal candidate will have experience in cidermaking, brewing or winemaking, with a desire to work in a growing company founded on a dedication to innovation and an emphasis on teamwork and culture. Work experience and a demonstrated capability in the following are required:
• Ability to manage all aspects of a fermentation, from start to finish and packaging, including strict adherence to sanitary procedures in both production and equipment maintenance
• Experience maintaining a brew system (or cider/wine equivalent), including equipment maintenance/replacement schedules, proper uses and storage
• Knowledge necessary to turn a system from batch to batch, including CIP, turnovers, transfers, pressurizing, kegging, etc.
• Understanding of all necessary science and procedures necessary to maintain strict QA/QC (sensory, pH, CO2, other chem, etc.) throughout the cidermaking process
Based in the Arboretum Neighborhood of Washington, DC, Supreme Core makes hard ciders for craft beer drinkers. We pride ourselves on using innovative techniques from the craft breweries we love while maintaining the integrity of high-quality cider. Our creations feature barrel-aging, hopping, fruit co-fermentations, and other techniques to provide drinkers with a unique experience. Launched in May 2018, we are distributed in Washington, DC and Montgomery County, MD.
