  • Ale bottle conditioning using lager yeast

    Dear all,

    I want to brew new types of beer (IPA, Witbier,...). Now my question, did someone already ferment ales and added lager yeast to perform the bottle fermentation at lager temperature? I can only do the bottle conditioning in the basement and the temperature is unfortunately very cold for ale yeast: 11-12°C.

    We use Scott laboratories DV-10 (S. Bayanus) for our bottle conditioning. It's a real work horse and a very neutral strain as long as you prime with dextrose monohydrate. It can create a vinous dryness when used with sucrose in my opinion. Our warehouse where we condition rarely gets quite that cool but Scott labs says it's minimum temp is 10c.

    Is there any way to bump up the temp in your cellar? Maybe use plastic tarps to make a tent around the pallets of conditioning beer and stick a few space heaters inside?
