    QUALITY MANAGER (LAB)

    Reports to: Director of Operations

    The Quality Manager is responsible for the daily lab duties required to ensure the highest quality product possible. This includes, but is not limited to, aseptic sampling, monitoring and documenting the microbiological and chemical analysis of all things related to the brewing, fermentation, and packaging processes, and managing the production team in sensory panel analysis.

    Responsibilities:

    Responsible for leading the monitoring of incoming materials, analyzing beer quality, sensory, microbiology, fermentation and yeast management
    Gather and present sensory data
    Working collaboratively across all departments ensuring processes and procedures that impact quality are completed properly
    Lead projects related to research and development of products and processes
    Investigation of quality-related concerns
    Maintain overall yeast health of several in-house strains
    Perform laboratory analysis of finished goods, in-process product, and raw materials in order to ensure the utmost quality, flavor and safety of our products.
    Perform daily testing on fermenting and finished beer
    Provide oversight for brewing team on daily cell counts of yeast
    Provide oversight for packaging team on DO testing on finished beer and all packaged beers
    Perform sterile plating and PCR testing of beer and yeast samples
    Routine analysis of all yeast cultures;
    Collection and analysis of wort & beer throughout production to ensure microbiological stability;
    Measurement of dissolved gases in wort, fermentation, packaging, and finished product;
    Monitor proper chemical usage/titrations in brewery, cleaning, packaging operations
    Monitor all aspects of fermentation (Extract, pH, etc.);
    Assist the packaging team in final package fill level and seam quality;
    Assist with the development of new laboratory SOPs.
    Collect samples of materials & finished goods throughout the brewery for laboratory and sensory analysis.
    Data gathering, entry, and analysis– lab results, yeast counts, sensory taste panel data, fermentation/brew-day data, etc.
    Assist with the administration of sensory panels and in collecting data as directed.
    In line with Company standards for communication, provide QA and sensory results and analysis with applicable brewery staff and management.
    Rigid compliance with established Company guidelines for safe and effective quality assurance analysis and all state & federal environmental & safety regulations.
    Ability to operate and perform maintenance on all Quality Assurance laboratory equipment.
    Must be able and willing to work a variable shift schedule that is dependent upon the operational needs of the brewery.
    Physical ability to lift up to 50 lbs. and maneuver kegs weighing up to 180 lbs. Bend, twist, crouch, kneel and stand for 8-10 hours at a time.
    Must demonstrate a professional and engaging demeanor at all times and treat every employee, customer and/or client with dignity and respect in all interactions.
    Performs other duties as assigned.

    Knowledge & Skills Requirements:

    4-year degree in Microbiology, Chemistry, Fermentation Science or similar science-based degree program. Similar job or work history with a minimum of 2 years’ experience.
    The candidate should possess a strong understanding of all areas of Quality Assurance and standardized laboratory testing in a food production environment.
