Ive been helping brew at a 7bbl brewery for a couple months. We're trying to improve our neipa (hazy IPA) and believe the next step is changing the yeast.
The owners are quite cost conscious and don't want to drop $400 on yeast for a single batch. We are currently adding the first dry hop charge (15lbs) on day 2 of fermentation to get the biotransformation effect.
Does anyone have suggestions for harvesting the yeast from these types of beers with the obsured amount of hops that would be present in the slurry?
We currently take off a couple gallons into a modified 5gal corny keg for re-pitching
