Ankrolab Brewing Company is a family owned brewery and tap room based in Naples Florida and opened in May of 2019. Naples is a world class tourist destination with a great quality of life. Naples reports more than 2,900 hours of sunshine a year and more than 300 sunny days a year. Naples hosts some of the finest beaches Florida has to offer and is regularly ranked as one of the top places to live in the US. Ankrolab Brewing Company has won multiple prestigious construction awards, including best commercial project 20,000 square feet and under for the entire SE US. As such, the workplace conditions are top tier, there is even air conditioning pointed directly at the brewer’s platform.

The brewery is equipped with a new Premier Stainless 15 BBL 2 vessel steam system, 30 BBL HLT, 150 BBLs of fermenter space, 2 brite tanks and a cold-water storage vessel. We utilize RO treatment for brewing water and a basic lab with plenty of room for more additions in the future.

There is a full-time assistant brewer to help as needed.

We do not currently can, filter, or centrifuge, but intend to add cans and filtering in the future.

This position is ideal for a brewer with creative passion. We team up with the local botanical gardens for events and pairings. Some recipes are already popular with the local market and will need to be recreated, however there is a lot of freedom for new flavors and styles. We can have as many as 32 rotating brands.

Head brewer requirements:

21 years of age or older and able to stand, walk, lift and bend for up to 10-12 hours per shift.
Managing production facility, product forecasting for both taproom and distribution.
Ordering all ingredients, chemicals, cleaning solutions for both BOH and FOH while maintaining appropriate inventory.
Work with hazardous chemicals in cramped and/or wet conditions with proper PPE.
Work on recipe formulation, beer concepts and refining processes.
Able to lift 55 lbs, and transport up to 160 lbs (full kegs) with assistance.
Perform wort production and clean up.
CIP brewery equipment and tanks.
Dry hopping.
Yeast harvesting and propagation while maintaining all brew logs.
Able to create and adhere to a schedule, also schedule and execute other brewery maintenance such as, but not limited to, HVAC, water filtration, air compressor, RO and keg washer.
Knowledge of Ekos, state and federal laws, and submitting required taxes.
Knowledge of draft equipment including maintenance and cleaning.
Basic problem solving, math skills and mechanical aptitude.
Attention to detail, ability to work unsupervised while maintaining safety and quality standards, and the confidence to speak up and act when safety and quality are compromised.
Will schedule assistant brewer’s hours.
Ability to travel for events and help pour, costs will be covered.
Flexibility while maintaining a positive attitude and a strong work ethic.
Able to maintain excellent customer service and a high level of ethics while working under pressure.

Preferred:

Sensory evaluation experience, BJCP, Cicerone certifications, etc.
Knowledge and drive to implement barrel programs.
Forklift certification.
Canning line experience.
4+ years commercial brewing experience.
Love of brut IPA’s and music is a huge plus!
