    Hello,

    I have recently started harvesting and repitching a lot more frequently for obvious reasons. One of my main yeast strains is US-05 and lately I have noticed that the three core brands that I pitch into have become much clearer than usual at a much faster rate. Cell counts have been great and viability is always around 96% and up. I typically harvest using the racking arm turned to the 8 o'clock position using a "Y" fitting. I will dump off the initial portion of yeast and harvest about 50kg from that position. After that I dump the rest and usually get another 12-15 gallons from the racking arm before dumping from the drain. The question I have is... am I harvesting too low and concentrating the higher floculating yeast cells? Everything else has been on point, flavor, pH, attenuation...etc.
