BIG SPRUCE BREWING – CRAFT BREWERY
Big Spruce Brewing is an Organic Craft Brewing company in Nyanza, Cape Breton, that started business in 2013 as a 7 bbl, 2 x fermenter brewery producing beer for sale in kegs and growlers. We have since grown to a business that includes the original 7bbl brewery (6 x fermenters, 5 x conditioning tanks), an adjacent 20 bbl brewery (40bbl unis and BBTs) with automated 5 head canning line, an on site tasting deck, and small capacity automatic bottler/crowned for specialty beer. Big Spruce is looking for a candidate to serve as Production Brewer for our 7bbl system. The candidate will also become acquainted with our larger 20bbl system. This is a chance to be involved in both one-off seasonal brewing, as well as with our year round offerings. Our annual ⁸sell rate has created the need for this position.
Responsibilities:
• 7bbl Brew House operations. Milling, mashing, lautering, boiling, Whirlpool, knockout, grain out and brew house CIP.
• Cellaring: to include Fermenter/Conditioning Tank CIP and Sanitation, Gravity monitoring, fermentation monitoring (inc glycol control), Crashing/Dry hopping procedures, yeast management, Record keeping, carbonation
• Packaging: Kegging and occasional bottling via HDP automatic filler/crowner (2 head)
• QA: Process Sampling, yeast viability, tasting, etc
• Recipe Formulation (as necessary)
• Create and manage brew schedule
• Detailed record keeping (inventory, brew logs)
• Communicate and plan with management and staff
• Coordinate with company OHS to ensure safe working environment
• Mentor and train junior brew floor co-workers
• Must be willing to pitch in on tasks that are outside core responsibilities
Job Requirements:
• 3+ years in brewing experience (advanced home brew experience will be considered)
• Experience in yeast handling
• Strong work ethic. Self motivated. Team oriented. Comfortable on ladders (training provided)
• Impeccable cleaning and sanitizing abilities.
• Ability to multi task in a high paced work environment.
Additional beneficial skills:
• Science/lab background
• Mechanical ability. Able to lift 55lbs with regularity.
• Barrel/wild/mixed fermentation experience
• Cicerone cert. Comfortable relocating to rural Cape Breton.
• Familiarity with HDP bottling equipment or Cask Canning lines
