Brewer II Job Description
The Brewer II reports to the Head Brewer and is responsible for many aspects of the day-to-day operations of the brewery. S/He plays active roles in brewing, cellaring, packaging, and cleaning. The Brewer II will follow brewing procedures and recipes established for and approved by Saucy Brew Works. Candidates must share our commitment to quality, safety, business ethics, innovation and culture.
Daily Duties
-Raw materials receipt, storage and retrieval for brewing
-On-time and accurate use of Ekos for brewery and inventory management
-Milling up to 1600 pounds in 50-55-pound bag increments, in accordance with a brew/recipe sheet, over approximately 45 minutes
-Wort production on a Braukon 20 hL automated brew house, to correct sugar and hop concentrations as dictated by the recipe/brew sheet
-Filling out brew logs, noting any discrepancies, and performing associated math equations such as mixing ratios and serial dilutions
-Dry hopping the prescribed amounts of hops to a designated fermenter via the top port of the tank or through the BrauKon HopGun as defined by the recipe
-Yeast management, including the harvesting and/or pitching of yeast from the prescribed fermenter/brink while following sanitary procedures
-Following established procedures to clean the brewhouse, fermenting and brite tanks
-Safely handling cleaning chemicals, and using the prescribed amount for each task
-Transferring or filtering beer from fermenter to brite tank in a sanitary manner under balanced pressure, via SPX Centrifuge (when applicable).
-Applying the correct pressure and volume of compressed CO2 gas to brite tanks for carbonation and displacement of beer as it is being packaged
-Using the associated equipment to fill or empty wooden casks, kegs, barrels, etc., and safely moving vessels on their storage rack with a forklift
-General cleaning of horizontal, vertical and sub-grate surfaces
Thorough understanding of Brewhouse operations, vessels, and CIP
Ensure Proper Wort is produced in the brewhouse
Hitting target mash pH, mash temp, liq to grist, OG, cool in volume, cool in temp.
BT/CIP SIP sign off, Yeast harvest, yeast tank CIP, Brewing 15/20 bbl batch SOP
General brewey troubleshooting, boiler troubleshooting, water management
Mash in on time according to schedule and tank availability
Able to use the schedule and daily fermentation data to determine availability of yeast and how it affects the brew schedule
Keg cleaning on an IDD single head keg cleaner, as well as all packaging tasks such as kegging and canning operations on a 6 head PS Angelus can filler.
Notify Head Brewer or Supervisor if brewhouse targets cannot be hit
Provide ideas in a productive and positive manner to help reach targets over long term (lower mash temp or rest time, longer WP rest, lower sparge addition)
Notify Head Brewer if inventory is running low (Includes malt, hops, brewing aids, cleaning supplies)
Use and calibration of Hach pH meter and Anton-Paar CBox
Thorough knowledge of brewhouse CIP
Thorough knowledge of brewhouse vessels and operation
Be a team player and able to interact with all levels within the organization
Adhere to and enforce all applicable local, state and federal laws, rules, and regulations
Other tasks may be assigned as needed
DESIRED SKILLS AND EXPERIENCE
Must be 21 years of age or older at the time of application
Able to pass a post-offer, pre-employment background check
Minimum 2 years of commercial production brewery experience required
Forklift operator certification preferred
Prior experience operating a forklift and pallet jack required
Ability to work any shift in a 24/7 production environment required
Strong work ethic and self-starting attitude
Strong interpersonal skills and a love for meeting and interacting with people
Thorough attention to detail and desire to take initiative
Must adhere to companyÂ’s policies and procedures
Desire to work in a fast-paced, growing company
PHYSICAL AND MENTAL REQUIREMENTS
Evening, weekend, holiday availability required
Able to stand for prolonged periods
Able to stoop, crawl, twist, turn, lift, kneel, climb ladders and stairs
Able to manipulate valves and clamps
Able to read and follow written English instructions
Able to regularly lift/carry 44-pound boxes
Able to regularly lift/carry 55-pound bags above waist level
Able to regularly twist, turn, kneel, climb, stoop, bend, crawl, lift and carry supplies and equipment weighing up to 75 pounds using appropriate techniques and tools
Able to lift/move 165 pounds with appropriate equipment and/or assistance
Able to proficiently stack and move barrels on barrel racks
Able to comply with safe chemical handling procedures, including personal protection equipment such as gloves and goggles
Able to both work and thrive in a high-stress environment that has a quiet to moderate noise level
Able to read and follow written English instructions
Able to safely navigate the tasting room and snack bar areas, including crowded spaces
Able to work in a factory/production environment which may be loud, slick, humid, cold, and hot
Able to work in indoor and outdoor environments with moderate noise and occasionally slippery floors
Able to comply with and enforce all health, safety, and personal hygiene policies and standards
