  • Philadelphia Area Brewery Seeks Head Brewer With Fermentation Science Background

    The most qualified candidate will become part the existing brewing team and will report directly to the CEO. Brewers participate in all facets of our 30 barrel brewhouse and cellar operations, including but not limited to raw material ordering, wort production, yeast management, record keeping, inventory management, QC, and fermentation management. Brewer must be well versed in fermentation and yeast management skills.

    Job Requirements:
    • Degree in Fermentation Science or completion of a brewing-science program
    • 5 years or more experience in a production brewery
    • Flexible work schedule: day, night shifts
    • Strong communication, planning, problem solving, and organizational skills
    • Strong leader, committed to pursuing further education, a passion for details, hardworking, determined, efficient and responsible.

    Production Duties and Responsibilities:
    • Wort production, scheduling and forecasting ~220BBLS/month
    • Work with CEO to schedule batches accordingly
    • Ordering of raw material to ensure it arrives to maintain production schedule (forecasting)
    • Maintain paperwork in an accurate and timely manner in brewery software
    • Document, track and maintain all quality control and fermentation information
    • Design new beers and brewing a series of pilot batches to prove out concept
    • Leads seasonal and one off beer brand recipe design and deviations.
    • Packaging: kegging and canning
    • Fermentation management with doing daily checks of gravity, sensory panels, forced fermentation and developing a lab
    • Manage the barrel program
    • Actively find improvements for the beer, our processes and write up changes as needed
    • Adhere to Safe Practices and lead by example
    • Spent grain removal from property

    Quality:
    • Yeast cell counting and viability testing
    • C02 and DO testing
    • Perform quality control and quality assurance testing (includes sensory panels, measurements, data collection)
    • Help lead quality programs including taste panels, lab sampling, brewing and fermentation logs

    Must Have:

    5+ years production brewing experience
    Degree in Fermentation Science or completion of a brewing-science program
    Great Communication Skills and ability to work with others
    Operate a Forklift and other complex machinery
    Lift 60 lbs and move 165 lbs efficiently and effectively
    Able to kneel and stoop occasionally.
    Able to stand and work for up to 12 hours at a time
