The Duck-Rabbit Craft Brewery is an award winning production brewery (with a cozy tasting room as well!) specializing in delicious, full-bodied dark beers. Roughly 65% of our production goes into bottles (the rest into kegs). We are located in Farmville North Carolina (a small town about an hour east of Raleigh; roughly 15 miles from the larger university town of Greenville NC). We are 14 years old this year (we sold our first beer in August of 2004).
We're looking for a Quality Manager to perform regular QA/QC tests on yeast, wort, beer and everything else that admits of testing with a small lab! This person will work closely with the brewing, packaging and management teams and will be responsible for the lab budget, for maintaining lab consumables and for making recommendations for new testing. This person will maintain and calibrate lab equipment and will create reports and share results with the brewing team, the packaging team and management.
Typical duties include, but are not limited to:
- Microbiological testing of beer in tanks and package using differential media (LMDA, LCSM, HLP)
- Measuring headspace air in bottles
- Measuring dissolved oxygen at filtration, brite tank and package
- ATP testing on tanks
- Performing cell counts on yeast harvests
- Monitoring fermentation progress
- Leading a sensory program
- Maintaining lab SOPs
- Maintaining a digital record of beer in the brewery
Professional laboratory experience or relevant formal education required.
