 Frontera has a long culinary history in Chicago. When Chef Rick Bayless opened Frontera Grill in 1986, he introduced the authentic, regional flavors of Mexico to the United States. Since then, Chef Bayless and Frontera have won numerous awards, including the James Beard Foundation Award for Outstanding Chef and Best Restaurant in America. As our growth continues, we're excited to add talented, forward-thinking individuals with an entrepreneurial spirit.

    Description:
    Our team is currently designing a 7-10 BBL brewery adjacent to a new Chef Bayless restaurant concept on West Randolph St. in Chicago. We are searching for an experienced brewer to join our team immediately to lead our project. This is a unique opportunity to work closely with Chef Bayless to develop a wide variety of traditional beer styles infused with Mexican/Latin ingredients and culture. We are very excited about this opportunity. This is a great platform for a talented brewer to make his/her mark in the industry.

    Prior to opening the brewery, the brewer will work closely with the project team on final equipment specifications and floor plans, participate in extensive training on Mexican/Latin ingredients, travel to Mexico, and produce test recipes at existing breweries in the Midwest. The guest beers will be featured at all Frontera restaurants and selected beer festivals.

    Requirements:
    • Five or more years of professional brewing experience
    • Bachelor’s Degree
    • Certificate from an accredited brewing science school preferred

    Essential Functions:
    • Complete competence in operating a 7-10 BBL system from grain to glass.
    • Lead the development of new beer recipes based on seasonal ingredients and inspiration from trips to various regions of Mexico and seasonal Frontera menus.
    • Manage assistant brewer and work closely with the restaurant management team.
    • Responsible for the brewery budget, production planning, equipment sourcing and maintenance, brewery logistics, inventory management, and ordering of materials.
    • Work closely with our purchasing director to select raw materials and coordinate crops with our Midwest farmer partners.
    • Periodically represent the brewery/restaurant at festivals, events, and competitions.
