Lab Technician/Yeast Management
Saint Archer Brewery is located in San Diego, CA with a 30bbl Brewhouse, 16x 120bbl FVs, 2x 60bbl FVs.
JOB DESCRIPTION:
This position is full time and maintains and manages all aspects of QA/QC and yeast management.
JOB RESPONISBILITIES, INCLUDING BUT NOT LIMITED TO
• Procures and maintains lab supplies and equipment
• Utilizes specialized equipment to perform microbial and chemical analysis
• Organizes and conducts sensory panels on packaged beer and brewing water analysis
• Perform quality checks on raw materials, fermenting product, and packaged product
• Records, organizes, and analyzes all yeast/fermentation related data.
• Performs all operations of yeast management including cell counts, viabilities, harvesting and pitching.
• Cleans and maintains an organized lab room and lab equipment
• Ability to troubleshoot and solve problems related to product and/or equipment
• Ability to make decisions about yeast related issues.
• Ability to work effectively both independently and within a team
• Ability to work closely with the brewer/cellar/packaging teams to proactively identify any potential contamination points
• Ability to perform under pressure and prioritize multiple demands
• Communicates with Head Brewer and Cellar manager about any potential problems in all aspects of the brewery.
• Ability to maintain confidentiality of recipes, processes, procedures, and other internal information
• Proficiency in Microsoft Office applications
• Ability to clearly identify and communicate cost saving processes and strategies to management
• 2+ years of production brewery or packaged food/beverage production QA/QC experience
• B.S in areas of Biology, Chemistry, or Fermentation science desired and Brewing experience and education are a plus.
• Proficiency with standard brewery lab equipment and tasks, including DO meter, CO2 measurement, ATP swabbing, cell counts, viability and vitality, and water analysis.
• Knowledge of microbiological techniques and wet chemistry.
• Knowledge of fermentation and beer is desired.
