Center of the Universe Brewing Company (COTU), a production brewery located in Ashland, VA (Metro Richmond Area), is seeking a Head Brewer.
We are looking for a highly motivated and skilled brewer to continue our 3 years of crafting exceptional and consistent beer in central Virginia.
Current year production is 4,000 bbls, 2016 projected volume of 5,500 bbls.
In addition to being an all around awesome person, the ideal candidate will possess the following skills:
• 4+ years working as a brewer at a production facility and 1+ years as a head brewer
• Commitment to quality and consistency
• Ability and willingness to diligently follow recipes and procedures
• Attention to detail and documentation
• Extensive knowledge of industry standards including GMP, OSHA, HAACP and TTB regulations
• Desire and ability to make Center of the Universe Brewing Company the Center of Your Universe – long days and nights, brewing, packaging, cleaning, sanitizing, organizing, tinkering, inventing…
• Full working knowledge of packaging equipment including bottling
• Ability to lift 55lbs and move 160lbs when necessary
• Excellent sensory analysis
• Have at least as much passion for producing great beer as we do
Duties:
• Operating and maintaining a 15bbl brewhouse
• Cellar duties from CIP to fermentation monitoring
• Manage inventory of hops, grains, and packaging materials
• Schedule all brewing and packaging
• Operation and cleaning/sanitizing packaging and kegging equipment
• Cleaning and sanitation of the brewhouse and cellar
• Work with partner(s) to perfect recipes and processes
• Basic maintenance and repairs
• Public Speaking: tours, festivals, tastings, special events
• Quality Control
• Be willing and able to perform and help out on other aspects of the brewing business
• Manage brew team
• Produce amazing beer
