    Bixi, a 200 seat brewpub to be located in Chicago, IL, is seeking an experienced Head Brewer to work with alongside our Chef, and our Cicerone(s).
    The brewer will be responsible for grain to glass brewery operations, year round and seasonal recipe development, special events, and restaurant staff training. In addition to brewery operations, knowledge of inventory management and all necessary tax related paperwork will be a requirement.
    The candidate should have the passion, professionalism and motivation needed to make innovative, idiosyncratic beers while maintaining the highest quality standard. We are constantly tinkering—improving upon ourselves and our product, and we expect the candidate to follow suit—if a product falls below expectation, the brewer should not be afraid to dump the batch and try again.
    Bixi will be a draft-focused brew pub located in the heart of Logan Square. We anticipate an Autumn launch date. Our goal is to provide delicious, culinary-focused craft beer with which we will pair Bixi's food offerings. More specifically, the infusion of Pan Asian ingredients ( e.g. teas, szechuan peppercorns, anistar, etc.) will be our primary interest, as Bixi's cuisine will incorporate many East Asian and Southeast Asian flavors. It is particularly important for our brewer to effectively execute base styles well, so that flavor additions are a compliment, not a distraction, to the beer.
    Additionally, the candidate will aid in the selection of our brewhouse equipment, choosing the most appropriate new manufacture or second hand pieces required to best execute the beer in our desired fashion.

    JOB DESCRIPTION:
    PRIMARY RESPONSIBILITIES & MINIMUM QUALIFICATIONS
    • 5 years commercial brewing experience with 2-3 years Head Brewer recommended
    • Experience managing all federal & state regulatory requirements including paperwork filings. A clear understanding of needs is required.
    • Brewing experience in a brewpub environment
    • Experience leading a brewery from grain to glass, up to and including draft equipment/service management.
    • Experience leading all brewing operations, including:
    Recipe development
    Purchasing & Inventory
    Yeast propagation
    Sanitation & Maintenance
    Consistent record keeping of every batch, every time
    • Common sense, ability to make sound decisions.
    • Self-motivated, self-starter

    ADDITIONAL JOB DUTIES WILL INCLUDE, BUT ARE NOT LIMITED TO:
    • Organizing and attending off and on site events
    • Promotional calendar coordinated with beer releases
    • Representing Bixi in all necessary festivals & events
    • Beer education & training for our staff and our customers
    • Cleaning all beer lines
    • Performing cellar operations, including monitoring gravities and fermentation metrics

    OTHER CONSIDERATIONS:
    • Flexible schedule with the ability to work off hours, evening, and weekends as required
    • Formal brewing education is recommended (work experience equivalent will be taken into consideration)
    • Critical and analytical thinking skills and the ability to make decisions based on brewing
    knowledge, and experience. Sound decision maker.
    • Knowledge of brewing industry standards and trends
    • Excitement and passion for brewing and craft beer as well as creativity
    • Highly motivated, self-starting, and able to work without supervision
    • Close attention to details
    • Team player a must
    • Willingness to assist with tasks outside key responsibilities
    • Communicate efficiently with team and customers
    • Strong mechanical and problem solving skills recommended


    PHYSICAL REQUIREMENTS:
    • Lift 55 lbs and move 165 lbs repeatedly
    • To be able to stand, kneel, twist, bend over for 8-10 hours per day
    • Ability to work safely with potentially hazardous chemicals
    • Work in a non-temperature controlled environment, handling of hazardous materials
