    POSITION OVERVIEW

    Mass. Bay Brewing Company (MBBC), parent company of Harpoon, UFO, Clown Shoes, Arctic Summer and City Roots, is seeking a Kitchen Shift Lead to join the Harpoon Beer Hall staff. The Kitchen Shift Lead will report directly to the Kitchen Manager and will be responsible for daily production and the operations of the kitchen when the Kitchen Manager is not present. This includes supervision of Line Cooks, Prep Cooks, Dishwashers, in addition to numerous operational and administrative tasks. The Kitchen Shift Lead will ensure the kitchen operates according to the real time demands of the Harpoon Beer Hall and the service & quality standards of MBBC.

    The Kitchen Shift Lead will play a critical role in maintaining a safe, clean and highly productive work environment, in addition to maintaining MBBC's culture. This individual must be able to execute their duties without on-site supervision from the Kitchen Manager or Manager-on-Duty (MOD) which requires, among other things, self-reliance, problem solving skills and a temperament that can handle stress. Finally, the Kitchen Shift Lead must recognize that the open kitchen is a highly visible and important part of MBBC's guest experience and therefore will constantly ensure that the kitchen projects all aspects of MBBC's brands.



    RESPONSIBILITIES

    Production Schedule
    • Setting forth any production changes according to business or event needs hourly, on a daily basis, when Kitchen Manager is unavailable
    • Ensuring all daily production tasks are completed in a timely manner

    Ordering, Receiving & Product Control
    • Maintaining First In, First Out (FIFO) inventory of all kitchen products both on the line and in storage
    • Ordering according to inventory pars and/or production schedule twice weekly or as needed
    • Presenting packing slips and reconciled invoices to Kitchen Manager for authorization

    Daily Production
    • Ensuring adherence to all Standard Operating Procedures (SOPs) in all aspects of daily kitchen operations including:
      • Opening
      • Closing
      • Food production
      • Line supervision
      • Quality standards
    • Accommodating special needs resulting from events

    Supervision
    • Overseeing Line Cooks, Prep Cooks and Dishwashers
    • Providing hands-on training, coaching and guidance to ensure compliance with all SOPs with new staff / trainees as well as continuous development of staff
    • Holding staff accountable to their duties on a real time basis and communicating any issues with the MOD in the moment
    • Ensuring all daily cleaning and maintenance tasks are completed according to standards

    Hygiene, Health & Safety
    • Complying with MBBC's SOPs
    • In conjunction with the Kitchen Manager and MODs, ensuring ongoing compliance with all hygiene, health and safety standards as established by governing authorities


    REQUIREMENTS/EXPERIENCE/SKILLS
    • 2+ years of professional kitchen experience
    • Established competency with the following:
      • Order and inventory management
      • Production scheduling
      • Cost control systems
    • Highly reliable, organized and energetic
    • Culinary passion
    • Genuine enthusiasm for craft beer


    WORKING CONDITIONS
    • Variable work hours that include night and weekend work
    • Prolonged standing, bending, stooping, twisting and lifting of products and supplies weighing up to 65 lbs.
    • Working with hot, cold and hazardous equipment
