    Ghost Isle Brewery is looking for an experienced Head Brewer to manage all brewery operations. The head brewer will report directly to the General Manager and work closely with the owners on all aspects of the brewery.
    New Buffalo, Michigan is located in the very southwestern corner of the state on Lake Michigan, just over an hour from Chicago. Our busy season is from Memorial Day to Labor Day with around 25,000 people including the surrounding area. Business slows down considerably during the winter.
    We have a 10 BBL, 2-vessel American Beer Equipment Steam System with rakes, pneumatic valves & control screen.
    Our brewery has 4 fermenters and 8 serving tanks that feed directly to the bar. Minimal kegging! We are a brewpub and all beer sales will only be from our location.
    We are a full service restaurant, bar & brewery with 7,000 sq feet under roof plus a fire pit and deck that overlooks scenic wetlands.
    Opening March 2019- We will begin brewing in January.

    Qualifications

    - A degree or certificate from a technical/academic brewery program
    - 5 years professional head brewing experience
    - Strong knowledge of brewing techniques, quality control, lab analytics, yeast management, beer transfers, cleaning & sanitation, packaging & cellaring
    - Mechanically inclined/ Handy man
    - Experience in recipe development & management
    - A commitment to safety and quality by following industry standards and OSHA regulations & procedures
    - Knowledge of developing & documenting Standard Operating Procedures
    - Strong organization & time management skills
    - ATTENTION TO DETAIL
    - Microsoft Exel & Brewery program experience
    - Ability to work well with the team & individually
    - Strong oral and communication skills & ability to give and accept constructive feedback

    Responsibilities

    The head brewer is responsible for brewing operations, fermentation, cellaring and packaging including:


    • Create new recipes and improve existing recipes with input from owner
    • Set the brewing schedule and maintain inventories of raw materials and finished beer
    • Manage yeast per best practices and industry standards, including pitching, cropping, and monitoring yeast
    • Ensure the highest quality and consistency through use of best practices, including lab tests to monitor and troubleshoot fermentation, in-process, and finished beer
    • Cleaning and sanitation of all equipment and work areas
    • Ensure product quality in tap room by helping clean lines, checking CO2, etc.; work closely with tap room staff and provide training about beer knowledge
    • Perform equipment maintenance, troubleshooting problems that arise, and repair as needed
    • Help develop standard operating procedures that ensure all aspects of beer production and packaging align with safety, sanitary, and quality protocols
    • Be an active brewery representative, including participating in promotional/marketing events which may require night and weekend availability. (Not often)
    • Assist the owner and other team members in developing growth strategies and effectively communicate (written and oral) with the owners
    * Federal & State Excise recording/reporting


    Physical Abilities

    • Ability to lift 55 pounds and move up to 165 pounds safely
    • Ability to work in confined spaces, with a clear demonstration of safe work practices
    • Must have the ability to regularly stand for long periods of time, perform tasks that require dexterity and precision
    • Ability to work near moving mechanical parts
    • Ability to frequently reach with hands and arms and stoop, kneel, or crouch
    • Frequently exposed to wet conditions, exposure and handling of caustic chemicals
    • Ability to work in to work in a loud environment with temperature fluctuation
    * Operate a walk behind fork lift

    Safety Requirements

    - Eye protection when handling chemicals
    - Solid, anti slip, waterproof boots
    - Ear protection when necessary
    - Face respirator when in mill room
