I was wondering as to peoples experience with the fermentis K-97 wheat beer yeast. What are the esters @ what temps....you know the basic info. I am looking to replace my WLP300.

We use this yeast to brew an American wheat beer. This yeast, although popular with our patrons, does not produce any of the esters associated with the German Wheat strain (I've experimented with temps from 60 to 70 degrees). Fermentis is supposed to be producing a strain that will give these flavors according to a mailer I received with my last Crosby and Baker catalog but I don't have any more info than that off hand.
