I came across this article the other day. It's a long, but engaging read. I recommend reading the whole thing, but the gist of the article was that tipping creates a classic agency problem, where your server doesn't do what's in your restaurant's best interest, in an attempt to curry favor with customers.

Very good read, all six parts, post-scripts, and closing. I hate tipping. I would be likely to return to a restaurant or pub like he described.
