In the past I've used 3 vessel, HLT, mash tun, copper. Looking at a smaller pilot systems the vast majority seem to be single infusion with just mash/lauter and copper. I can see the benefits of this, but not having worked on a system without sparging seems pretty weird (only because it's something I'm not accustom to). How do people who have used both styles find the difference?
