  • C02 in closed top fermenting tank? (Newb q)

    I have a Letina 600 gal Red fermenter (closed top), and I was wondering if C02 can be used as a purger for the headspace? I know most people use N2 in closed top tanks, but I wanted to use C02. What psi to the tank? I know that you want the N2 around ~0.5psi. Would that be the same with C02? Is there a regulator that can regulate the C02 that closely? Or can to C02 be at a higher pressure?

    You do not need to gas purge the headspace of a fermenter:

    - Pitched wort should be aerated to give an oxygen level of around 10-12ppm for yeast growth, so all that will happen if you purge the fermenter is that you will lose some oxygen into the headspace, lowering the dissolved level;

    - As fermentation progresses and the dissolved level drops, any oxygen in the vessel's headspace will be absorbed so that, at the end of fermentation, there will be almost zero oxygen in both headspace and your freshly-fermented beer.
