    Howdy. We are looking at a closed top Letina tank (NOT a VCT) for our wild/sour program to be used as a blending tank in our cellar program. We will be using it to blend and to dose priming sugar into the beer. Our thought was to replace the sample valve with a racking arm, so that we could re-circ in a vortex to thoroughly mix the priming sugars. We would also be bottling from this tank (still beer, not carbonated...for bottle conditioning). I have been told that these tanks are not rated to hold pressure, however, we are hoping to push the beer from the tank to the bottling unit with CO2. Has anybody used these tanks for this purpose? I assume (yeah, yeah...I know) that this is SOP for a winery...but I wanted to get some feedback. So, have any of you used these tank for this purpose? They aren't perfect, but the price-point is pretty impressive.
