I am guessing I could modify the two white filling tops to receive a co2 fitting on one side and and out tube on the other to the tank but am really wondering what kind of pressure the drum can handle as the fruit is about 9 brix and pretty thick.
Fyi, We only have a standard brewhouse transfer pump, nothing that is powerful enough to move the purée.
