  • Phenols???

    Anyone ever experience beers that seem tart even though PH is in normal finish pH range and mash pH is good as well as water temps. I get some tartness and it starts to build up phlegm in the throat. It's just sensory issues. Beer flavor is great. Higher alcohol and the tartness goes away it seems but phlegm still builds in the throat. Polyphenols?
