    What are the requirements for having a mill and venting the dust? Is it state-by-state? For a small brewpub application milling 50-60 lbs of malt for small batches, are there any exemptions for that light volume?

    I'm not sure about specific laws as I've never had to install a new system myself. But you really ought to have a ventilation system, especially in a somewhat enclosed area. First, for safety, as you'll be breathing malt dust (even if you wear a mask, the dust spreads out into other parts of the brewery). There is also the possibility of a dust cloud explosion if the air collects enough dust (about 50 g/m^3) and there is a spark... this shouldn't really be too much of a risk if you're only doing it once a day, but something to think about. Not having ventilation will also be pretty messy, too, and you'd have to spend more time cleaning up the whole area. Once and awhile I used to forget to turn on our vent fan when milling and the air was noticably thicker.
