  • Maple Syrup added to Fermenter

    I've got a brown ale that I'm wanting to add some maple syrup to after primary fermentation has completed -- does anyone know if the maple syrup needs to be boiled before adding to the fermenter? I'm concerned about possible infection, etc.

    I suggest boiling. The Aw (available water) of maple syrup is about 0.88. Some molds and yeasts can grow at an Aw of 0.61. You might be ok because of pH and if it's a high abv beer but why take the chance. A 10 minute boil should be easy enough to do.
