  • Tall vs short Fermenters any issues?

Hi there just about ready to pull the trigger on a new fermenter which would be a 20bbl fermenter built with the diameter and cap of a 15bbl fermenter which would give it a tad bit of a taller skinnier form. Still has a 60 degree cone with 3 cooling jackets (2 in the body one in the cone) and all other aspects are normal anybody have any input on tall skinny vs short squatty fermentation os does it even make a difference...thanks in advance

Skinny tanks are more likely to foam over. Imagine 20 bbls worth of fermenting gases trying to escape through a narrow circle of wort at the top. Better with the slower fermenting lagers than rambunctious ales.

Tanks are cheaper to build tall/skinny. Very tall tanks will have yeast performance issues due to hydrostatic pressures. Usually not with this small a tank. So your other concern is clarity. Tall tanks take longer to drop bright. There is quite a bit in the literature about tank geometry. Yes, it does make a difference. Whether you can deal with it is up to you.
